Popcorn Cake Recipe

This popcorn cake recipe was a favorite my mom made when we were a kid. Popcorn Cake is kind of like Rice Krispie treats but made with an obvious replacement: popcorn. When it comes to cooking, I can’t do recipes because I never remember to measure. But when it comes to baking, I always do as it’s more chemistry. What is best about this recipe is you get sweet and salty. It is great for picnic parties as it’s not one that typically melts like a traditional cake.

Recipe for Popcorn Cake

4 quarts of Popcorn ( about 3 bags of popcorn)

1 pound marshmallows

2 cups of M&M’s

1 cup peanuts

1/2 cup butter

1/4 cup oil

melted marshmallows, butter, and oil in plastic container

Pop the popcorn, microwave or stove, your choice. Melt butter, oil, and marshmallows in a microwave safe bowl. Using the wrapper from the butter, rub the angel food cake pan to get it nice and coated. Mix well, then pour in popcorn, stir gently. As it’s still warm but not hot, add M&M’s and peanuts stir completely. Put in angel food cake pan and cool.

If using microwave popcorn, don’t just dump it in the bowl. This is important. You don’t want the kernels in your cake!!

Have fun with it. Typically with this popcorn cake recipe, I like using M&M’s that are per the event like Red, White, and Blue for summer, red and green for Christmas, etc. They make a nice, colorful addition and just add that little bit of extra to it!
